An exemplary wine cellar, unparalleled service and French inspired cuisine are under the direction of culinary talent chef de cuisine Markus Glocker. A native of Austria, Markus has helped to lead the kitchen since its opening in November 2006.
Born in Gallneukirchen, Austria, a small city near Linz, Markus discovered an interest in the arts at an early age, studying classical music as a child. He soon began working in his uncle’s hotel during school breakfast while going on to pursue a career in the culinary arts. Markus enrolled in culinary school in Linz and upon graduating, trained as a commis chef at the Restaurant Vier Jahreszeiten in Munich, Germany.
In 2001, Markus began working with Gordon Ramsay at his celebrated Gordon Ramsay at Claridge’s in London. He then joined the three Michelin-starred Restaurant Eckart Witzigmann in Berlin, Germany before moving to the United Statesin 2003 to work in the kitchen of Charlie Trotter’s in Chicago. In 2005, Markus moved back to Austria to work in the two Michelin-starred Restaurant Steirereck Vienna before returning back to the US in 2006 to serve as sous chef of Gordon Ramsay at the London until he assumed his current role of Chef de Cuisine.
The Menu Prestige features fresh seasonal dishes such as sauteed Hudson Valley foie gras Poussin roasted on the bone, foie gras torchon, baby lettuce, Burgundy truffle; Maine diver scallops, curried cauliflower, pressed mango, spiced chickpeas; Filet of turbot "gratiné", marinated sungold tomatoes, white asparagus, basil velouté; Colorado lamb, Moroccan couscous, braised artichokes, Meyer lemon, lamb vinaigrette; and vanilla semifreddo, ginger-infused cake, local blueberries, yogurt sorbet.
Within the kitchen is The Chef’s Table: a renowned feature of five of Gordon’s UK restaurants. At Gordon Ramsay at The London, up to eight guests are able to experience the pace and drama of the kitchen in full service while enjoying a specially created menu by Markus Glocker and his team (Dinner $1,900).
